I love this quote, and it sums up perfectly the change I’ve been trying to make in my diet recently.  In the past few months I’ve had the opportunity to eat a ton of offal, probably more than I have in my entire lifetime prior, and you know what, when done well, it really is delicious and absolutely nothing to be afraid of.  

Also, his advice for PETA is spot on. 

this guy is real talking… when killing an animal…. it would only be respectful to eat it all..
